Fig Spice Balls

Energy balls rock in my family's world. They are sweet, delicious, and hit the spot. Dried figs I have to admit look a little unsightly. Once you get past that, they are pure delicious! Did you know that figs are rich in vitamins and minerals. Vitamins A, B1 and B2, manganese, potassium, magnesium, copper, iron, and phosphorus all can be found in figs. This recipe is super easy too.  

Ingredients:

15 dried organic figs 
1/2 cup dried organic unsweetened shredded coconut
1/4 tsp. organic cinnamon
1/4 tsp. organic ginger
1/8 tsp. organic nutmeg

Blend figs in the food processor till they resemble dough like texture. 

Add 1/4 cup of  dried unsweetened coconut, cinnamon, ginger, and nutmeg process until all ingredients mix to make a nice dough that can be rolled into balls. 

Roll dough into 1 inch balls.

Place 1/4 cup of shredded coconut onto a plate and roll balls to cover. 

Eat and enjoy!

I refrigerate balls up to one week and they make a delicious sweet healthy treat! If you try out the recipe, let  me know how you like it.
