Happy New Year 2018

As I sit and ponder 2017, I walk away with many ways to make 2018 a better year. What a perfect time to reflect on these goals and an awesome opportunity to jot them down.


My theme for 2018 is to do something I love every day!

I continue to stay to my vision of learning to dance in the rain. God wants me to be content, he yearns for me to be unshaken by difficulties that come my way, and he desires me to look to him and stay focused on his promise. I want to please him and be ready for every blessing he has in store for me. So, while I continue to follow the journey he put in my heart, I want to make it a exceptional year by enjoying everyday!

Here are my 2018 goals.

1. Do something I love everyday!
2. Get in bed earlier.
3. Budget my money better.
4. Take more walks.
5. Create at least three blog posts a week.
6. Organize myself better.
7. Don't put off to tomorrow what I can do today. Do it now!
8. Spend more quality time with those I love.

I pray that the Lord lays somethings on your heart to encourage you, and to stretch you to reach all those things he has in store for you.

Perfect Instant Pot Hard Boiled Eggs

My boys love hard boiled eggs, and I love using my Instant Pot! What a perfect match. The first time I tried cooking my eggs in the Instant Pot they were a little rubbery looking in my opinion, but my kids still devoured them. I always want the eggs perfectly cooked with no gray ring around the yolk. I finally achieved my version of the perfect egg (if only I could eat them).


Here is what you will need:

Instapot
Wire Rack Insert for Instant Pot
1 cup of water
Eggs

Instructions:

Insert wire rack into Instant Pot. Add one cup of water to the bottom of the Instant Pot.  Place eggs on top of wire rack (I usually cook 4-8 eggs). Select the pressure cooker button, change to low pressure by pushing the pressure level button, and set time for 13 minutes using the +/- button. Once complete, turn off the the Instant Pot by pushing the cancel button. Do a quick release by letting out the steam and rinse eggs in cold water. Peel and enjoy!

Outta this World Apple Muffins

These muffins are out of this world and a new favorite for our family. Deliciously sweet, dairy free, egg free, and no refined sugar. I love having these muffins on hand for breakfast on the go or a afternoon snack. Muffins also make a great cupcake just add your favorite frosting and you have a gourmet flavored cupcake in hand.

Here is what you will need to make this yummy treat.

1/2 cup warm water
2 tbsp organic ground flax seed
1 cup organic whole wheat flour
3/4 cup organic all purpose flour
3/4 tsp cream of tartar
1 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
1 cup cubed apples
1 cup shredded apple
1/2 cup organic applesauce
1/3 organic coconut oil (melted)
1/2 cup raw honey or  organic maple syrup (I prefer honey)
1/2 cup coconut cream

Instructions

Preheat oven to 425 degrees. Prepare muffin tin (I used a standard muffin tin with liners).

Add 1/2 cup warm water to a small bowl and 2 tbsp ground flax seed. Stir it and allow it to sit for 5 minutes to make flax egg.

Add all ingredients to a bowl and mix well. Distribute batter equally to make 12 muffins. Cook for 15 minutes. Eat and enjoy!

You can freeze any leftover muffins, that is if there are any left. (grin)

Bursting Blueberry Muffins

These blueberry muffins are my oldest son's favorite muffin. They are dairy free, egg free, and refined sugar free. They are perfect for breakfasts on the go and weekday mornings. I always keep a stash in the freezer for those mornings when I wake up and need something in a hurry.

Here is what you will need:
1/2 cup warm water
2 tbsp ground organic flax seed
1 cup organic whole wheat flour
3/4 cup organic all purpose flour
1/2 tsp cream of tartar
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup organic melted coconut oil
1/2 cup organic coconut cream 
1/2 cup of honey or organic pure maple syrup 
Zest and juice from half of a lemon
1 cup organic blueberries ( I use organic frozen blueberries that I buy in bulk from Costco)

Instructions:
Preheat oven to 375 degrees. Prepare muffin pan (I like these liners).

Make flax egg by mixing warm water with ground flax. Allow it to set 5 minutes.

Add all other ingredients except blueberries in a large bowl.  Add flax egg to bowl. Mix all ingredients together and then add blueberries.

Bake muffins for 22 minutes.

O Christmas Tree

My boys had a great time decorating their trees for the season. 

My little guy decorated his with Tsum Tsums from last years advent calendar and a fabric scrap left over from his Tsum Tsum party last year. It turned out so adorable I couldn't resist sharing.


My oldest decorated his tree with an entrepreneur spirit at heart. Using his Monopoly collection he decked out his tree with money chains, property cards, topping it off with a money star, and finishing it off with the game board as a tree skirt. I love their creative imagination and their ability to use things on hand to make their trees reflect the things they love.
