April 17, 2018 0 Comments
Donuts! So fun, easy to eat and such a treat. It is bursting with blueberries, with it's cake like texture. Best of all, it is dairy free, egg free, with no refined sugar, and passed the kids approved list! Yeah-a!

Donuts! So fun, easy to eat and such a treat. I have been working on a donut recipe for sometime now. This one turned out delicious and best eaten fresh, of course. It is bursting with blueberries, with it's cake like texture. Best of all, it is dairy free, egg free, with no refined sugar, and passed the kids approved list! Yeah-a!

Donuts! So fun, easy to eat and such a treat. It is bursting with blueberries, with it's cake like texture. Best of all, it is dairy free, egg free, with no refined sugar, and passed the kids approved list! Yeah-a!

Here is what you need to have on hand to make them now!

1/4 cup of almond milk
1 tsp lemon juice
1/3 cup maple syrup
3 1/2 tbsp coconut oil, melted
1 cup all purpose flour
1/4 tsp sea salt
1/2 tsp cream of tartar
1/4 tsp baking soda
1/2 cup frozen blueberries

Directions:

Preheat oven to 350 degrees. Grease your donut pan with a little extra coconut oil. Combine all ingredients together in a bowl except blueberries. Fold blueberries into batter. Don't overmix, as the blueberries will make the batter purple. Bake for 12-14 minutes. Allow to cool and enjoy!

Hope you enjoy this one as much as we did!

Blessings,
Bridget

"Gone Bananas" Muffins

November 25, 2017 0 Comments

Looking for a banana muffin recipe that is dairy free, egg free, with no refined sugar? Look no further; your recipe is here. My boys and I love these muffins, hence the name"Gone Bananas" Muffins.  They never last long in our house.

Here is what you will need to get started.

Ingredients:

3/4 cup organic whole wheat flour
3/4 cup organic all purpose flour
1/4 tsp cream of tartar
3/4 tsp baking soda
1/2 tsp salt
1/2 cup warm water
1/3 cup raw honey
2 organic ripe bananas, mashed
1/2 cup organic walnuts, chopped (optional)

Instructions:

Preheat oven to 350 degrees. Prepare a standard muffin pan. I use liners as it makes for easy clean up.

Make flax egg. Combine 1/2 cup warm water with 2 tbsp ground flax seed in a small bowl.  Let it set for 5 minutes.

Add flours, cream of tartar, baking soda, salt, coconut oil, honey, mashed banana, and flax egg mixture to bowl. You can add walnuts at this time if using. If your making this for kids it is best to break the nuts in small pieces or pulse in food processor for a few minutes; as mine do not like big chunks of nuts in their muffin. The nuts are great to help stabilize the sweetness of these muffins.

Bake for 20 to 22 minutes. Check them by inserting a toothpick in the muffin. If it comes out clean they are done.  Allow them to cool for a few minutes before serving.

Hope you enjoy these delicious muffins! Blessings!
