Who can resist Italian? Italian food is a family favorite here. If your looking for the perfect dressing to accompany your Italian dish look no further. This one is delicious, and those with vinegar sensitivities can indulge in this one.

Homemade Italian Dressing

Ingredients:

3/4 cup olive oil
1/4 cup fresh lemon juice
1 large garlic clove or go for 1 1/2 if you love garlic, minced
1 tsp basil
1 tsp oregano
1 1/2 tsp sea salt

Tools:

Immersion Blender

Instructions:

Add all ingredients to a mason jar. Blend with immersion blender until creamy and smooth. Chill and Enjoy!

This is a super easy recipe, and I hope you enjoy being able to make homemade Italian dressing.

Homemade Croutons Yeast Free - Delicious & Addicting!

After sharing my recipe for Yeast Free Rolls, I just had to share a few other delicious things that can be made with them. I love to make homemade croutons. They are simply addicting; great on salads, delicious in homemade soups, and perfect for eating right off the tray. These are super easy and a awesome way to use leftover rolls. Once you make these you will never go back to store brought ones. I love that they are crispy and not too hard like the store bought ones.

As I noted in the recipe, I like to use parchment paper to line my baking sheets. My favorite is Kirkland's brand. Parchment paper makes easy clean up and keeps things from getting stuck on the pan. I use it all the time, it's a staple in my house. I also would like to recommend an organic avocado oil. It was a hard search to locate it but, Amazon doesn't disappoint. I purchase this brand and it is wonderful. Sometime it goes out of stock because it is that good and reasonable too! Lastly, I always use Kirkland's Sea Salt and Simply Organic's Italian Seasoning. I know that some do not have access to local health food stores so, I am providing the sources for your convenience,

Yeast Free Roll Recipe - Quick & Easy

Got  craving for bread but, suffer with a yeast sensitivity? I'm excited to share my latest discovery, Yeast Free Rolls! Your gonna love this recipe; it is easy and satisfying. These rolls are great served as a dinner roll, perfect for a sandwich, and a nice alternative for a hamburger bun.

The main key to these rolls is the timing during the baking process. If they cook to long they will take on a biscuit texture. So, unless your wanting a crunchy roll, take them out when they start to get golden on top. This is usually around 12 minutes.

It is best to allow them to cool before slicing, and of course they are best the day they are made! The recipe is so easy that you can make them in a moments notice though.

Eat Clean Blueberry Donuts

Donuts! So fun, easy to eat and such a treat. It is bursting with blueberries, with it's cake like texture. Best of all, it is dairy free, egg free, with no refined sugar, and passed the kids approved list! Yeah-a!

Donuts! So fun, easy to eat and such a treat. I have been working on a donut recipe for sometime now. This one turned out delicious and best eaten fresh, of course. It is bursting with blueberries, with it's cake like texture. Best of all, it is dairy free, egg free, with no refined sugar, and passed the kids approved list! Yeah-a!

Here is what you need to have on hand to make them now!

1/4 cup of almond milk
1 tsp lemon juice
1/3 cup maple syrup
3 1/2 tbsp coconut oil, melted
1 cup all purpose flour
1/4 tsp sea salt
1/2 tsp cream of tartar
1/4 tsp baking soda
1/2 cup frozen blueberries 

Directions:

Preheat oven to 350 degrees. Grease your donut pan with a little extra coconut oil. Combine all ingredients together in a bowl except blueberries. Fold blueberries into batter. Don't overmix, as the blueberries will make the batter purple. Bake for 12-14 minutes. Allow to cool and enjoy!

Honey Sweetened Sweet Tea

Delicious Honey Sweetened Iced Tea with No Refined Sugar

Sweet tea and me belong together! When I decided to kick refined sugar, the first thing I missed was my sweet tea. I scoured the internet looking for the perfect honey sweetened ice tea. I tried several recipes, and just didn't find what I was looking for. Then, I set out to create it on my own. The result was perfectly sweetened, delicious, honey iced tea.

The Perfect Recipe for Delicious Honey Sweetened Iced Tea with No Refined Sugar

Here is what you will need:

6 Organic Black Tea Bags
7 Tbsp. Raw Honey
12 Cups of Water

Place 12 cups of water in a pot. Bring the water just to a boil. Turn off the heat, add honey, and stir till dissolved. Add the tea bags, and allow it to sit for 5 minutes. Remove the tea bags. Pour over ice and serve, or place in the refrigerator until chilled.

I hope you love this recipe as much as I do. Try flavored black tea too. My absolute favorite is Allegro Organic Decaf Ginger Peach Tea from Whole Foods. It is so delicious!

Fiesta Mexican Beef Bowl

Fiesta Mexican Beef Bowl Recipe with Clean Eating Ingredients, Quick, Delicious, and a Family Favorite.

My family loves this Fiesta Mexican Beef Bowl. It is quick, versatile, and tastes great! It can be served over rice, on tortillas, or over cauliflower rice. My boys never refuse these leftovers.

Fiesta Mexican Beef Bowl with Clean Eating Ingredients - Kid approved!

Here is what you will need:

1 lb ground beef (you can substitute ground chicken or turkey too)
1 - 14 oz can diced tomatoes
3/4 cup chopped onion
1 green bell pepper chopped
2 cloves of minced garlic
1 tbsp chili powder
1 1/2 tbsp cumin
1 tsp sea salt
1/2 tsp paprika
1/4 tsp oregano
1/4 tsp garlic powder
1/4 tsp onion powder


Instructions:

Add ground beef, onion, garlic, and green pepper to skillet. Brown the ground beef till it is fully cooked. While it is cooking, I blend my diced tomatoes till smooth in my Vitamix Blender (any blender or immersion blender will work for this). Remove the pan from heat, and add in blended tomatoes and all spices. Return to heat and reduce heat to low. Cover with a lid and cook for 15 minutes. Enjoy over rice, tortillas, or cauliflower rice.

Instant Pot Millet

Have you ever tried millet? It is delicious served for breakfast, or as a substitute for rice. My husband likes it with a little butter on it, but, I opt for dairy free. My favorite way to eat it is with some almond milk, cinnamon, and raisins cooked like a breakfast cereal. I'll be posting that recipe soon, so stay tuned.

Well, as it turns out millet is awesome in the Instant Pot.  What I love about the Instant Pot is that it is a fix it and forget it. I can move around preparing other food items and it's ready in a "instant" 😊.

Instant Pot Millet


Here is what you'll need.

Instant Pot
1/2 cup millet
1 cup water

Instructions:

Add 1/2 cup of millet and 1 cup of water to the Instant Pot. Lock the lid in place and make sure the vent is closed. Select pressure cook for 9 minutes, make sure the pressure is set to high. Once complete hit the cancel button and manual release the pressure.

Fig Scones

Fig Scone

This delicious Fig Scone is sure to be a crowd pleaser for all ages. I love the crispy texture of the scone and the sweet fig filling. My boys are sure to have me whipping this one up weekly! Did I mention it is egg free and dairy free!

Costco sells this large bag of Organic Dried Figs. My boys love them, and will eat them right out of the bag. The first time they caught sight of them they were a little hesitant, but I have strong, daring boys. They bit into one and quickly asked for another. Then they joked about serving them in a dish to friends and family. I have to admit they don't look so appetizing when you see them dried but, I can tell you they still have that sweet delicious taste that everyone loves. Well, after purchasing this large bag of dried figs I wondered what else could I make with them. I came up with my Spiced Fig Balls which are a delicious snack, and today I came up with this tasty Fig Scone.
Fig Scones Egg Free Dairy Free
Here is what you will need:

1/2 cup warm water
2 tbsp ground flax seed
2 cups whole wheat flour
1/4 cup of pure maple syrup
1 tsp coconut sugar
1/3 cup coconut oil
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking soda
1/2 tsp sea salt
1 cup of dried figs
1 small apple (shredded)
1 lemon (use juice & zest)
1/4 cup of apple juice

Instructions:

Add figs, shredded apple, juice from one lemon, and 1/4 cup of apple juice to a saucepan.  Cook on low for about 10 minutes to soften. Allow mixture to cool, then process in a food processor until smooth.

Make flax egg by combining the warm water and 2 tbsp ground flax seed. Allow it it set for at least 5 minutes.

Combine flour, maple syrup, melted coconut oil, lemon zest, cinnamon, nutmeg, baking soda, and salt in a mixing bowl until it forms a dough ball. Prepare a baking sheet lined with parchment paper. Separate dough in half and press each half into a 6 inch circle on the parchment paper. Add fig filling to the center of one circle. Spread mixture over the circle leaving 1/2 space from edge of crust. Place the other 6 inch circle on top. Gently slice the circle into 6 pie shaped pieces. Separate the pieces to allow some space between them. Sprinkle 1 tsp of maple sugar to the tops and bake for 25 minutes.

Allow it to cool slightly and enjoy!

It Is Chili Weather

Baby, it's cold outside and perfect weather for a hot bowl of chili. Chili holds a special place in my heart as I have fond memories of my mom making up a big batch of chili. I loved every bite! Now, I am building chili memories with my boys.

I am hooked on my Instant Pot. I love being able to load everything in and take a few minutes to do some chores as the Instant Pot works it's magic. No stirring required.


Here is what you will need:

1 lb Organic Grass Fed Ground Beef (Costco is my favorite brand)
1 14 oz can of Organic Pinto Beans
1 14 oz can of Organic Black Beans
2 29 oz can of Organic Diced Tomatoes (I use 365 Brand)
3 tbsp. Organic Chili Powder
1 Organic Onion (diced)
2 tsp Sea Salt
2 tsp Organic Onion Powder
2 tsp Organic Garlic Powder
1 tsp Organic Paparika
2 tbsp Organic Coconut Aminos
Instant Pot

Instructions:

Add the ground beef and diced onion to the Instant Pot. Push the Saute button on the Instant Pot. Cook beef until browned.  Then hit the cancel button on the Instant Pot.

I like to puree my diced tomatoes as my boys are not crazy about chunky tomatoes in their chili. They can be pureed easy with an immersion blender or in your Vitamix. Blend until smooth.  Add pureed mixture, beans, and spices to the Instant Pot. Make sure your vent is sealed and then hit the chili button for 30 minutes.  It really doesn't need 30 minutes if you are in a hurry you can get away with 15, but I like how the flavor enhances with time.  Quick release your Instant Pot when done. The smell is wonderful and sure to get the families attention.  Serve and enjoy!

Tomato Basil Soup

Okay, I'm back with another Vitamix recipe. I told you the Vitamix could do some amazing things. Did you know it could make delicious hot soup? I didn't but, when I found out it was my next stop.

Today I am sharing a recipe I from Practical Stewardship for Blender Tomato Basil Soup. I made a few little tweaks to this recipe to suit my families palate, but overall this was an easy and delicious recipe.  Congrats Sonja for creating this delicious recipe that is now a family favorite.

You can find Sonja's original recipe here. Below you will find my tweaks.


Here is what you will need:

1 29 oz can of organic diced tomatoes
1/4 onion
4 garlic cloves
1 tsp salt
1/2 tsp oregano
10 large leaves of fresh organic basil
1/2 cup almond milk
2 tsp organic avocado or coconut oil

Instructions:

Add 2 tsp organic avocado or coconut oil to small skillet over medium low heat. Saute 1/4 onion till softened, then add 4 cloves of minced garlic. I like this garlic press it has made my life so much easier. Just add the unpeeled clove and press. It is quick and easy! Saute garlic for just 1 minute. Add mixture to your Vitamix.

Add diced tomatoes, salt, oregano, fresh basil, and almond milk to the Vitamix.  Start on the first setting and increase to the highest setting. Blend for 5 to 6 minutes until the soup is hot.  Pour into bowls and serve. This makes about 3 cup servings.

I like to serve mine with homemade biscuit croutons. Use my biscuit recipe found here. Slice one biscuit into bite size pieces. Add 1/2 tsp organic italian seasoning and 1/8 tsp salt to biscuits. Bake at 350 on a baking tray lined with parchment paper for 10 to 12 minutes.

Bursting Blueberry Muffins

These blueberry muffins are my oldest son's favorite muffin. They are dairy free, egg free, and refined sugar free. They are perfect for breakfasts on the go and weekday mornings. I always keep a stash in the freezer for those mornings when I wake up and need something in a hurry.

Here is what you will need:
1/2 cup warm water
2 tbsp ground organic flax seed
1 cup organic whole wheat flour
3/4 cup organic all purpose flour
1/2 tsp cream of tartar
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup organic melted coconut oil
1/2 cup organic coconut cream 
1/2 cup of honey or organic pure maple syrup 
Zest and juice from half of a lemon
1 cup organic blueberries ( I use organic frozen blueberries that I buy in bulk from Costco)

Instructions:
Preheat oven to 375 degrees. Prepare muffin pan (I like these liners).

Make flax egg by mixing warm water with ground flax. Allow it to set 5 minutes.

Add all other ingredients except blueberries in a large bowl.  Add flax egg to bowl. Mix all ingredients together and then add blueberries.

Bake muffins for 22 minutes.
