Homemade Waffles

These homemade waffles are crispy and delicious just like a waffle should be. I make mine egg free, dairy free, with no refined sugar, and even the finickiest eater will gobble them up without question.
So, let's get cooking!


Homemade Waffles


Ingredients

2 cups all-purpose flour
2 tsp cream of tarter
1 tsp baking soda
1 tsp sea salt
2 tbsp pure maple syrup
2 tablespoons ground flax seed
1/2 cup warm water
1 1/2 cup almond milk
1/3 cup coconut oil + more for waffle iron (melted)
1/2 tsp cinnamon

Tools

Waffle Iron


Instructions

Combine 2 tbsp ground flax seed with warm water. Allow it to sit 5 - 10 minutes. 

Heat waffle iron and grease with extra coconut oil to prevent sticking. 

Combine all ingredients in a large bowl. Stir until all ingredients are combined.

Spoon into your waffle maker and cook until desired crispiness. Serve with pure maple syrup, honey, or jam.

Yummy Banana Bowl

Banana Bowl - My version of an acai bowl or smoothie bowl gone bananas. Simple, quick, and addicting! Great for breakfast, snack, or healthy dessert. Kid Approved!

If you love bananas, your gonna love this one! This Banana Bowl is simply addicting. My version of a acai bowl gone bananas. If you can't get your kids to eat fruit, I just bet they will love this one.

The best part about this recipe is that it is quick, simple, and you can use what you have on hand for toppings. I used blueberries, raspberries, and no oat granola. Use what you love, fresh peaches, coconut flakes, strawberries, nuts, etc.  This is delicious for breakfast,  an awesome snack, and perfect for a healthy dessert. Call it what you like, I call it delicious!

All you need to make this work is a food processor, parchment paper, and some frozen bananas. No toppings - no problem just eat as it is. It's delicious!

Ah, sweet summer! I hope you all are settling down and enjoying some lazy days of summer. We are wrapping up some of our last homeschool lessons and plan to take a short break before we start back on our lessons. Today, I would like to share my delicious tomato sauce recipe. Yes, you could just buy it in a jar but, this one is so simple and tastes fabulous. You will be asking yourself why would I want too?

Making homemade tomato sauce is one of the most simple things to make. I always keep canned tomatoes in the pantry they are a staple in our house. They can be used for chili, salsa, Mexican beef bowl, Mexican rice, and more. I have listed below the recipe and and instructions. The recipe is super easy with an immersion blender because you can blend everything in the same pot. It works just fine with the blender; I just love not having to clean the blender. 😊

I am sure that this recipe will become one of your family favorites. It can be used as a pizza sauce too. If you run short on time you don't have to cook it for 30 minutes. This simple thickens the sauce and increases the flavor.

Instant Pot Jasmine Rice

Instant Pot Jasmine Rice. Now you can make aromatic jasmine rice at home in your instant pot. Quick, simple, and tastes like it came straight from the restaurant.
What beats the aromatic, delicious rice from your favorite Thai restaurant? Making the same delicious rice at home in your instant pot. I love how the rice is not at all soggy, but slightly sticky which allows for the juices of whatever you are topping it with to cling to the rice. When I tasted this delicious rice, I said, "This tastes just like a Thai restaurant's rice!" I'm sure your going to love it too.  Just grab your Instant Pot and follow along.

Instant Pot Jasmine Rice. Now you can make aromatic jasmine rice at home in your instant pot. Quick, simple, and tastes like it came straight from the restaurant.

Here is what you will need.
1 cup Water

Instructions:
Add 1 cup of water and 1 cup of Jasmine Rice to the Instant Pot. Close lid and be sure vent is closed. Hit the Manual Button and set time to 10 minutes at high pressure. Once complete hit the cancel button and allow the Instant Pot to do a natural release.  Once done, open and enjoy! 

Just in case you wanted to make a bigger serving of this delicious rice, I tried two cups of rice and two cups of water at the same time and setting and it worked out wonderful. 

As a side note I always try to use organic products. Amazon has a great price for 6 bags of organic rice. At the time of this post it is equivalent to $3.39 a bag. According to my price comparisons that is a great stock up price!

"I Cannot Taste the Kale" Smoothie

I was blessed with a Vitamix for Christmas from my dear mother. So, I am dedicating this post to her, for her generous spirit and wanting to make my life easier. Thanks Mom!

The Vitamix is beyond amazing, and does things that I never thought of doing. I can make all kind of things in this machine, and I can't wait to share. I tried and tried to make kale smoothies with my Oster blender, and we just could not enjoy chunks of kale in our smoothie.

So upon receipt of this awesome gift, my first stop was the kale smoothie. The Vitamix blended it perfectly without a trace of kale. We love it so much we drink it everyday! I occasionally try something new and my kids reply, "We like the kale one best". How awesome is that! Okay, enough already, I'll share the recipe.



Here is what you will need:

Vitamix
1 cup of orange juice
1 banana
1/2 cup frozen mango
1/2 cup frozen pineapple
1 large handful of fresh kale (I usually estimate a amount that would fit smashed in one cup)

Instructions:

Add all ingredients to the Vitamix. Start on the lowest level, and increase to the highest level slowly. I usually run it for a minimum of 45 seconds on high or until I see no little kale specs.

On a side note kale is so good for you. I was looking over the health benefits with my little guy on Dr. Axe's website. After he saw it was good for his eyes he said, "Can I have extra kale in mine?" LOL, 🤣 I love my kids. Some of the amazing benefits of kale that Dr. Axe outlines on his website are that it is anti-inflammatory, a antioxidant food, naturally detoxifying, supports your heart, promotes brain development in infants, helps prevent cancer, and promotes healthy vision. After reading all that I was ready for a extra helping myself. If you have not checked out Dr. Axe's website he has a wealth of information. His site is my go to site for so many things.

Instant Pot Perfect Brown Rice

My husband loves brown rice, but it has to be done right. It has taken me years to perfect it; then the Instant Pot came along. The first time I made it it was too crunchy. Second try, was too mushy. Finally I perfected it, and I'm going to share the details with you. I am so glad that I can use my Instant Pot to complete this chore easily and deliciously.  No more burnt rice! Yay! Okay, enough excitement. Lets get on with the details so you can get making it too.


Here is what you will need:

1 1/2 cup water
1 cup brown rice
Instant Pot

Instructions:

Add 1 1/2 cup water to the Instant Pot.  Then add 1 cup brown rice. Press the Pressure Cook button, make sure your Instant Pot is set to high pressure (use the Pressure Button to adjust between high and low pressure). Set the time to 15 minutes (use the +/- buttons to change the time).

When completed, hit cancel. Do not do a quick release; allow the Instant Pot to do a natural release.

Then open and enjoy!
